Sure you can. Type in this text in the Modify Profile section, inserting the changes where needed:

What about size or font?

Size and font are very similar. To change the size, enter the following:
<font size="numerical size here">text here</font>
To change fonts, enter this:
<font face="new font here">text here</font>

Can I put anything in italics or bold?

Yes, of course. Enter in this code for italics:
<i>text here</i>
And try this for bold:
<b>text here</b>

Can people read my profile when I'm offline?

Yes they can. They can view it with this link:
http://www.altprofiles.com/users.php?action=profile&user=Your Login Name HERE

Can I see someone else's profile while they are not online?

Sure, but you have to know their AIM Profiles login name (not their screen name). Just go here and type in their login name.
